Through observation, your little scientist will recognize the effects of ascorbic acid, commonly found in lemon juice. This is due to its low pH level that interacts with oxygen before the fruit’s polyphenol oxidase enzyme does that in turn delays the browning process. This hands-on exploration provides an excellent opportunity to discuss the pH scale and delve into brainstorming other substances that might similarly prevent apple browning.
